Potato Poppers

Ingredients
  

  • 1 lb. new potatoes
  • 1/4 cup olive oil
  • 2 tbsp. mayonnaise
  • 2 cloves garlic, minced
  • 4 tbsp. parmesan cheese
  • 1/3 cup white wine
  • 1/4 cup fresh oregano, chopped

Instructions
 

  • Heat oven to 425 degrees.
  • Boil potatoes for 5-6 minutes.
  • Slice potatoes lengthwise and dab with olive oil. 
  • On a single baking sheet, place potatoes in oven and cook until crisp, about 10 minutes. 
  • While baking, saute garlic in olive oil until golden brown. 
  • Pour garlic and olive oil into a bowl and add in all the ingredients. 
  • Once potatoes are baked, dab mixture on top of potatoes. 
  • Serve immediately.
