Preheat oven to 350 degrees.
Slice cutlets thin.
Beat eggs.
Dredge cutlets in breadcrumbs, then in beaten egg.
Fry chicken cutlets on both sides until done. Set aside.
In the same frying pan, crumble sausage and cook until done. Set aside.
Add sliced green peppers and sauté until soft, about 5 minutes. Mix the peppers, pimento, and sausage together.
In a medium-sized pot, add tomato sauce and paste. Stir well and cook through, about 7 minutes. Remove from heat.
In a baking dish, spoon a thin layer of sauce on the bottom.
Add chicken cutlets and spoon peppers/pimento/sausage combination on top.
Add the rest of the tomato sauce on top, and sprinkle the mozzarella cheese on top.
Bake in the oven for 15 minutes, or until cheese has melted and the dish has heated through.
Remove from oven and let rest for 10 minutes before serving. Serve with a side salad. Enjoy.
