Aurora's Chicken Pepperoni

Ingredients
  

  • 4 chicken cutlets, sliced thin
  • 3 eggs, slightly beaten
  • 8 oz. thinly sliced pepperoni
  • 1/2 cup breadcrumbs
  • 1/2 cup sliced green peppers
  • 6 oz. ground sausage
  • 1 16 oz. jar of good quality tomato sauce
  • 2 6 oz. cans tomato paste
  • 1 16 oz. package shredded mozzarella
  • oil for frying
  • basil for garnish
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350 degrees. 
  • Slice cutlets thin. 
  • Beat eggs. 
  • Dredge cutlets in breadcrumbs, then in beaten egg. 
  • Fry chicken cutlets on both sides until done. Set aside.
  • In the same frying pan, crumble sausage and cook until done. Set aside. 
  • Add sliced green peppers and sauté until soft, about 5 minutes. Mix the peppers, pimento, and sausage together. 
  • In a medium-sized pot, add tomato sauce and paste. Stir well and cook through, about 7 minutes. Remove from heat. 
  • In a baking dish, spoon a thin layer of sauce on the bottom.
  • Add chicken cutlets and spoon peppers/pimento/sausage combination on top.
  • Add the rest of the tomato sauce on top, and sprinkle the mozzarella cheese on top. 
  • Bake in the oven for 15 minutes, or until cheese has melted and the dish has heated through. 
  • Remove from oven and let rest for 10 minutes before serving. Serve with a side salad.
