Thunder Cake

Ingredients
  

  • 1 cup shortening or unsalted butter
  • 1 2/3 cup sugar
  • 3 eggs, separated
  • 1 cup milk or water
  • 14 cup pureed tomatoes
  • 1 tbsp. vanilla
  • 3 cups cake flour
  • 3/4 cup cocoa
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 pint strawberries, washed and halved

Instructions
 

  • Preheat oven to 350 degrees.
  • Beat the egg whites until stiff. Set aside.
  • Mix together cake flour, cocoa, salt, and baking soda.
  • In a separate bowl, mix the wet ingredients: egg yolks, milk/water, pureed tomatoes, and vanilla.
  • Mix together the wet and dry ingredients until blended.
  • Fold egg whites gently into the batter.
  • Grease 2 8-inch round cake pans.
  • Bake cakes for 40 minutes. Let cool.
  • Wash and pat dry strawberries.
  • Once the cakes are cooled, add frosting in between the layers. Place strawberry slices on top of frosting.
  • Place the second cake on top of the first.
  • Frost all around the cake with your kids.
  • Slice and enjoy.
