bell peppers, sliced horizontally
1
cucumber, sliced in 1-inch pieces
veggies of your choice
Instructions
Wash all vegetables thoroughly. Pat dry.
Slice peppers horizontally, removing the seeds and ribs.
Take 1 slice of cucumber and secure it to the pepper with a toothpick.
Do the same for the other three wheels.
Repeat for the other halved peppers so that each pepper has four wheels.
Fill each bell pepper with veggies of your choice.
Place veggie train on a platter with some dipping sauces such as ranch dressing or hummus.
Serve immediately.
