Veggie Train

Ingredients
  

  • 2 bell peppers, sliced horizontally
  • 1 cucumber, sliced in 1-inch pieces
  • veggies of your choice

Instructions
 

  • Wash all vegetables thoroughly. Pat dry. 
  • Slice peppers horizontally, removing the seeds and ribs. 
  • Take 1 slice of cucumber and secure it to the pepper with a toothpick.
  • Do the same for the other three wheels.
  • Repeat for the other halved peppers so that each pepper has four wheels.
  • Fill each bell pepper with veggies of your choice. 
  • Place veggie train on a platter with some dipping sauces such as ranch dressing or hummus. 
  • Serve immediately.
