These Bell Pepper Egg Flowers Are An Eggcellent Start To Your Day

When it comes to something to serve to your kiddos for breakfast, eggs are always an easy, go-to. After all, they can be boiled, scrambled, fried, or whipped up into an omelette. But while they might be an eggcellent source of protein, lower your triglycerides, and have oodles of antioxidants, you can get even more health benefits (and make them look pretty on a plate), when you serve up these bell pepper egg flowers.

Although you might not encourage your kiddo to play with their food, these bell pepper egg flowers are fun to make — and good for you, too. Bell peppers pack a one-two punch in terms of potassium, vitamin A, and antioxidants, too. They’re also very easy to make; simply slice peppers horizontally into half-inch thick slices, and place into a heated frying pan with butter. Crack an egg into each one, and you have a breakfast that is as beautiful as it is healthy.

 

Bell Pepper Egg Flowers

Ingredients
  

  • 4 eggs
  • 1 bell pepper
  • 1 tbsp butter

Instructions
 

  • Wash bell pepper and dry.
  • Cut 1/2-inch slices horizontally, removing seeds and ribs.
  • Heat frying pan to medium high.
  • Heat 1 tbsp of butter in frying pan.
  • Add pepper slices into frying pan, cooking on each side for two minutes.
  • Crack one egg into each flower.
  • Cover frying pan with lid and cook for 2-3 minutes, or until desired doneness.
  • Sprinkle with salt and pepper, and serve.
