Actor Said Faraj’s Recipes Pay An Appetizing Homage To His Lebanese Roots

From Green Zone to “The Shield,” and Dune: Part Two, Said Faraj’s characters have been as varied as the versatile actor himself. Where Faraj isn’t acting is in his love for the Lebanese food that he grew up with. “My favorite recipe is our Mezze, a selection of hors d’oeuvres which can consist of around forty small hot and cold dishes,” says Faraj.

 

Scrumptious salads are a signature part of this platter of goodness, and as such, you’ll need a dressing that is as delicious as the Mezze itself. Faraj serves this meal (yes, Mezze can be a main course) with a traditional dressing that pairs perfectly with the apps. “This dressing is my own homemade recipe,” he says.

In addition to the dressing, the dish that Faraj favors the most is Fattoush. It might seem like a simple salad (think lettuce, tomatoes, and cucumber) but it has extra ingredients that raise it to a new level. “Fattoush is the second most popular salad after Tabbouleh,” adds Faraj. “Chickweed is wonderful in this salad, and in addition to the great taste, it’s very nourishing.” If you can track down some of the more elusive ingredients, you’ll find that this Lebanese dish is one that will make its way to your table — and often.

If you’re planning on preparing this mega meal, you’ll need the finest ingredients possible, according to the actor. “All the ingredients must be fresh, washed and dried well,” says Faraj.

Mezze Salad Dressing

Prep Time 10 minutes

Ingredients
  

  • 1/2 cup lemon juice
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic, crushed
  • 1 tsp. salt
  • 2 tbsp. Sumac

Instructions
 

  • Crush the garlic with the salt.
  • Add the lemon juice, oil, and the Sumac. Mix well. 
  • Place in the refrigerator for at least one hour before serving.

Fattoush

Prep Time 15 minutes

Ingredients
  

  • 1 cup crisp toasted pita bread
  • 3 small Persian cucumbers, chopped
  • 1 head Romaine lettuce, shredded
  • 2 medium tomatoes
  • 1/2 cup chopped green pepper
  • 1/2 chopped spring onions
  • 1/4 cup chopped mint
  • 1 cup chopped chickweed
  • 1/2 cup salad dressing (see above recipe)
  • salt and pepper to taste

Instructions
 

  • Add all of the ingredients to a large bowl. Mix well. 
  • Add the dressing, mix, and serve.
