Chicken Cutlets With Sun Dried Tomatoes And Capers Is What’s For Dinner Tonight

Chicken Cutlets With Sun-dried Tomatoes And Capers

Ingredients
  

  • 3 tbsp. extra virgin olive oil
  • 4-6 sun-dried tomatoes
  • 2 tbsp. capers
  • 2 cloves garlic, chopped
  • 4-6 medium chicken cutlets
  • 1/2 cup flour
  • 1/4 cup white wine
  • 2 tbsp. parsley, chopped
  • 3/4 cup chicken stock

Instructions
 

  • Dredge both sides of chicken cutlet in flour and set aside.
  • Heat oil in frying pan.
  • Add garlic, sun dried tomatoes and capers. Sauté lightly for about 2 minutes, and transfer ingredients to a bowl.
  • Add floured cutlets. Cook for 2-3 minutes on each side or until golden.
  • Place the sundried tomatoes, capers, and garlic mixture on top of the golden cutlets.
  • Add wine and let evaporate, then add parsley.
  • Add 1/2 cup water or chicken stock and let simmer for 3-5 minutes.
  • Enjoy!
